No Gluten Pancake Recipe

As someone who becomes super inflamed after eating large portions of gluten or in a consecutive setting, I still enjoy to have pancakes, pastries, and bread as a meal filler to help me stay full longer and to satisfy my sweet tooth. My pancake recipe uses amaranth flour which I make by placing the amaranth in a blender for one minute making sure all the grains are ground into a powder. Amaranth Amaranth is a highly nutritious pseudo-grain that offers a variety of health benefits. Here are some key nutritional advantages: 1.  High in Protein Amaranth is rich in protein compared to most grains. It contains around 9 grams of protein per cooked cup (about 246 grams). This makes it an excellent plant-based protein source, especially for vegetarians and vegans.
